Pepper Pot Soup


2 Quarts water
2 lbs soup meat

2 lbs spinach/ Callaloo

6 okras cut up

2 tbsp salt

1 clove garlic crushed

2 med white potatoes diced

1 sprig thyme

1 stalk escallion

1/2 small sweet(bell) pepper

1 small onion diced

Seasonings to taste.

Method:

Put water in a large soup pan.  Bring water to a quick boil add meat , spinach(callaloo), okra and potatoes.  Cook until tender.

Add remainder of ingredients and spinners and simmer for a further 20 minutes. Serves 6 or more persons.

Pumpkin Beef Soup

(traditionally, a large pot is made on Saturdays after the housewife had been to market.  One of the easiest and tastiest one pot Jamaican meals.)

3 lbs soup meat or stew cut up

Ground Provisions

1/2 lbs pumpkin diced

1 1/2 lb pumpkin cut into large pieces approx 4 " * 3"

1lrge cho-cho diced

1 large cho cho cut into 4 quarters

1 lbs carrot cut up

1turnip diced

2 lbs yam cut up into 4" pieces

1 lb coco cut up (approx 3 pieces per coco)

Seasonings

1 tbsp salt

1 packs Grace cock soup mix

1/2 onion sliced

1/2 small sweet(bell) pepper sliced

2 stalks escallion

2 sprigs thyme

1 scotch bonnet pepper

1 tbsp All  purpose seasoning

 

Method

Put on a large pot with 2 quarts water.  Rinse soup meat well and season with salt ans all purpose seasoning. Add to pot and boil until tender( about 1 hour).  Alternatively, use pressure cooker and pressure the meat to reduce cooking time.

After meat is cooked, top up water back to the 2 quart level. Add, yam,coco,and then add about 15 minutes later, the other ground provision ingredients.

Cook for 15 minutes then add seasoning and dumpling.  Simmer for 10 minutes and serve hot.

Mannish Water


(traditionally, a large pot is made enough to feed an army!  This recipe feeds about 15 persons.  Adjust as necessary for your purpose.)

8 lbs goat meat cut up (head & belly)

12 pimento berries

Ground Provisions

3 lbs pumpkin diced

4 lrge cho-cho diced

2 lbs carrot diced

1 doz green banana diced

2 turnips diced

2 lbs yam cut up

1 lb coco cut up

Seasonings

1 tbsp salt

2 packs Grace cock soup mix

1 onion diced

1 sweet(bell) pepper diced

2 stalk escallion

2 sprigs thyme

1 scotch bonnet pepper

 

Method

Put on a large pot with 4 quarts water.  Rinse goat meat well and add to pot.  Boil until tender ( about 4 hours).  Alternatively, use pressure cooker and pressure the meat in batches to reduce cooking time.

After meat is cooked, top up water back to the 4 quarts level. Add, yam,coco,banana, and then add about 15 minutes later, the other ground provision ingredients.

Cook for 20 minutes then add seasoning and spinners.  Simmer for 6 minutes and serve hot.

 Spinners

2 cups flour with enough water to knead to a stiff dough.  Knead dough till pliable.  Break off little pieces and roll to a lengthwise shape between the palms of your hands.

Use in soups, stew peas and othe meat dishes.
