2 cloves garlic, finely chopped 1 1/2 cups fresh or reconstituted coconut milk Water (enough to make 2 cups liquid) 1 cups long grain rice or brown rice 2 stalks escallion, crushed 2 sprigs fresh thyme (1/2 tsp dried thyme) 1/4 tsp pimento powder or 2 pimento berries crushed Salt and pepper to taste Cook red kidney beans to package directions. Put cooked beans into a large pot and add garlic and pimento. Measure all liquids, including reserved bean liquid, coconut milk and water enough to make 2 cups. Add the 2 cups of liquid to the bean mixture in the pot. Add rice, crushed escallionon, thyme, salt and pepper to taste. Bring to a boil. Reduce heat. Cover and cook for about 20 minutes or until all liquid is absorbed.
